At Italicious, every salume begins the same way it always has in our family with good meat, patience, and respect.
We craft all our cured meats in-house, using traditional Italian methods and one essential ingredient: premium Tablelands pork, raised with care right here in Far North Queensland.
For over four generations, the Fortunato family has cured coppa, salame, and pancetta by hand, following recipes that carry memory as much as flavour.
No shortcuts. No imported meats. Just honest, handcrafted salumi made slowly, made properly, made by us.
